egg on top



no fava at the market today, so I decided to get some asparagus, not my favorite, but it is the season, and they do look pretty good.

like bacon a few years ago, poached or soft fried egg seem to be on every fucking appetizer at ever restaurant, not that there is anything wrong with that, a good egg is good any time of the day, on anything (it is still best at 3 in the morning, with chicken fried steak, but that is another story).

I cooked the spears gently in olive oil with ramp and some chili, top that mess with a poached egg, I really quite enjoyed it, it is missing some herbs, some mint would have been pretty sweet.
