Cold brewed coffee is getting some serious attentions in recent times (I just had some awesome cold brewed coffee at Caffeteria Soho in NYC). But cold brewed tea is just as great and much easier. My dad told me about this a couple of years ago: take a large pinch of good quality Chinese tea leaves, put in a large pitcher of cold water, leave in your fridge for about a day, done.
The flavor and perfume will be subtle, pleasantly so, it is delicious and refreshing on a hot day.
