I love eating squid, but preparing it sometimes lead to undesired consquences. but the reward is certainly worth the trouble.

I was reminded how great this dish is by the recent issue of Saveur magazine. I made this dish a lot when in graduate school, it is really quick and simple but very satisfying. Some good bacon (guanciale was not easily obtained), good cheese and a fresh egg, and then happiness.
