salted pork belly and cornmeal dumpling

I really like fergus Henderson's 'the whole beast - nose to tail eating'. Besides the ethnic eateries, he has been serving offal long before the current fad amongst the pseudo bistro or even high end establishments.

I got this book when the north america edition first came out, and have gone through it a few times. But I have not used many recipes from it, I am not sure why, because they are all quite accessible and delicious.

Case in point, this salted pork belly and cornmeal dumpling I ate last night ... at some point I will need to start watching out how much pure animal fat I eat on the weekly basis, but not just yet.

Duan got married!!!!!!

Holy shit, it was hard to believe when I heard that he was engaged, it is still hard to believe now that it is a done deal. The weekend was just fucking epic. Duan went to a strip joint for the first time. Cried and dance at the wedding, then french kissed his girl in front of everyone (that may not sound like a big deal for anyone else, but for Duan, it is like seeing a fucking unicorn). Even more awesome was showing up at the dinner in this traditional chinese wedding getup. There was just a non-stop train of these WTF moments all weekend.

(and of course we were served warm beer at dinner, in paper cups).
